Cooking Steps
Step 1: To begin making the Amaranth Leaves Khichdi Recipe, first prep all the ingredients and keep aside
Step 2: Wash the rice and dal and keep aside
Step 3: Into a Pressure Cooker, add the rice, dal, amaranth leaves, turmeric powder, salt and green chilies
Step 4: Add 5 cups of water to get a good mish mash khichdi
Step 5: Cover the cooker, place the weight on and cook for 2 whistles
Step 6: After two whistles turn the heat low, and simmer for 3 to 4 minutes and turn off the heat
Step 7: Allow the pressure to release naturally
Step 8: Once the pressure is released, open the cooker and give the Khichdi a stir
Step 9: Check the salt and adjust accordingly
Step 10: Transfer the amaranth khichdi to the serving bowl
Step 11: For the tadka, in a tadka pan heat a tablespoon of ghee
Step 12: Add the mustard seeds, cinnamon stick and allow it to crackle
Step 13: Pour it over the Amaranth Khichdi and serve
Step 14: Serve Amaranth Leaves Khichdi Recipe with Gujarati Kadhi or Tomato Onion Cucumber Raita Recipe for a light and healthy meal
