Instructions
Cooking Steps
Wash the amaranth grains and soak them in water for 30 minutes.
In a pressure cooker or pot, heat oil over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add ginger paste and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped tomatoes, carrots, turmeric powder, coriander powder, red chili powder, and salt. Mix well.
Drain the soaked amaranth grains and add them to the pot. Mix well.
Add water and mix well.
Pressure cook for 2-3 whistles or until the amaranth is cooked and soft.
Open the lid and mash the khichdi with a spoon or a potato masher until it reaches a smooth consistency.
Garnish with fresh coriander leaves and serve hot.
