Cooking Steps
In a bowl, take amaranth flour.
Add warm water gradually and knead the mixture into a soft dough.
Cover the dough with a wet cloth and let it rest for 10-15 minutes.
Divide the dough into equal-sized balls.
Cut two squares of parchment paper, about 8–10 inches wide.
Place one sheet on your rolling board (chakla).
Take one portion of dough, shape it into a smooth ball.
Place it on the parchment, flatten gently with your palm.
Cover with the second sheet of parchment.
Roll gently with a rolling pin from the center outwards until you get a thin, even circle (about 5–6 inches).
Peel off the top parchment.
Lift the roti along with the bottom parchment and flip it onto the hot tawa, parchment side up.
After 3–4 seconds, the parchment will peel off easily.
Cook on medium heat until light brown spots appear, then flip.
Cook the other side for another 30–40 seconds.
Serve hot.
