Instructions
Cooking Steps
Drain the soaked almonds and blend them in a blender with 1 cup of water until smooth.
Heat coconut oil in a pan over medium heat. Add chopped onion and sauté for 2-3 minutes until they turn translucent.
Add minced garlic, grated ginger, and chopped green chili. Sauté for 1-2 minutes until the raw smell goes away.
Add cumin powder, coriander powder, turmeric powder, and salt. Mix well.
Add the almond mixture and vegetable broth. Mix well and bring to a boil.
Reduce the heat and let the soup simmer for 10-15 minutes until it thickens and the flavors are well combined.
Add coconut milk and mix well. Cook for another 2-3 minutes.
Garnish with fresh cilantro leaves and serve hot.
