Instructions
Cooking Steps
Heat oil in a pot over medium heat. Add cumin seeds and let them splutter.
Add chopped onion, minced garlic, and grated ginger. Saute for 2-3 minutes until the onions turn translucent.
Add sliced mushrooms and saute for another 3-4 minutes until they soften.
Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
Add almonds and saute for another 1-2 minutes.
Add water and bring the mixture to a boil. Cover the pot with a lid and let it simmer for 10-15 minutes until the almonds and mushrooms are cooked.
Let the mixture cool for a few minutes, then blend it in a blender until smooth.
Pour the soup back into the pot and reheat it over low heat.
Garnish with fresh coriander leaves and serve hot.
