Preparation
For Making Zucchini ribbons:
- Using a vegetable peeler, slice the zucchinis lengthwise into thin ribbons.
Cooking Steps
Heat olive oil in a large skillet or wok over medium-high heat.
Add paneer cubes and stir-fry for 5-7 minutes until they are golden brown and crispy. Remove from the skillet and keep aside.
In the same skillet, add zucchini ribbons, red and yellow bell peppers, and stir-fry for 3-4 minutes until they are cooked but still have a crunch.
In a small bowl, whisk together fresh lemon juice, balsamic vinegar, and chopped garlic. Add this mixture to the skillet and stir well.
Add the cooked paneer cubes to the skillet and toss everything together.
Season with salt and pepper to taste.
Garnish with fresh cilantro leaves and serve hot.
