1. Rinse quinoa under running water and boil it in 1 cup of water for 10-15 minutes or until the water is absorbed. Keep it aside.
2. Heat oil in a pot over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté for 2-3 minutes until they turn translucent.
4. Add minced garlic and sauté for another 1-2 minutes until the raw smell goes away.
Add diced carrots and chopped green beans. Stir well.
6. Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
7.Add vegetable broth and bring it to a boil.
8.Reduce heat and let the soup simmer for 15-20 minutes until the vegetables are cooked.
9.Add boiled quinoa. Mix well.
Simmer for another 5-10 minutes until the soup is heated through.
11.Garnish with fresh coriander leaves and serve hot.
