Instructions
Cooking Steps
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant and softened.
Add the carrots, celery, bell pepper, zucchini and broccoli. Cook for about 5-7 minutes until the vegetables begin to soften.
Sprinkle the rolled oats over the vegetables and stir well to combine.
Pour in the water. Add the oregano and bring the mixture to a gentle boil.
Reduce the heat to low and let the soup simmer for about 15-20 minutes, or until the vegetables and oats are tender. Season with salt and pepper to taste.
If you prefer a smoother consistency, you can use an immersion blender to blend a portion of the soup. Be careful not to over-blend; leave some chunks for texture.
Ladle the soup into bowls and garnish with fresh parsley.
