Mustard seeds

Split Urad Dal (Raw)

Chana Dal (Raw)

Rice, raw, milled

Instructions
Preparation
Rinse white Rice and Urad Dal separately.
Soak white Rice for 4-5 hours.
Soak Urad Dal and Methi Seeds together for 4-5 hours.
Drain and grind Urad Dal mixture into a smooth paste.
Cooking Steps
Heat oil in a small pan over medium heat.
Add the mustard seeds and let them splutter.
Add the chopped green chilies, asafoetida, and curry leaves and sauté for a few seconds.
Add the finely chopped mixed vegetables and add salt. Cook for a couple of minutes until the vegetables are slightly tender. Remove from heat. (You can add raw and grated vegetables to the batter)
Grease a small idli plate with a little oil.
Add the cooked vegetables to the idli batter and mix well.
Pour the batter into the greased idli plate or cups, filling them about 3/4 full.
Steam the idlis in a steamer for about 10-12 minutes, or until a toothpick inserted into the center of an idli comes out clean.
Once the idlis are cooked, remove them from the steamer and let them cool for a minute before gently removing them from the plates or cups using a spoon.
