Instructions
Cooking Steps
In a pan, add the chopped vegetables and onion. Add enough water to cover the vegetables.
Bring the water to a boil and then let it simmer for 5-7 minutes or until the vegetables are cooked through.
In a pan, dry roast the cumin seeds until they start to splutter.
Add the chopped tomato to the pan and cook for 3-4 minutes until it softens.
Add the coriander powder, turmeric powder, red chili powder, salt, and pepper to the pan. Mix well.
Add the cooked vegetables to the pan and stir well.
Let the mixture cook for 2-3 minutes on low heat until all the flavors are well combined.
Garnish with fresh coriander leaves and serve hot.
