Cooking Steps
Preheat your grill to medium-high heat (about 350-400°F or 175-200°C).
In a small bowl, whisk together the olive oil, minced garlic, dried oregano, salt, and pepper for marination.
Place all your sliced & chopped vegetables in a large mixing bowl, and then pour the marinade over them. Toss the vegetables to coat them evenly with the marinade. Let them marinate for about 15-20 minutes, allowing the flavors to infuse.
While the vegetables are marinating, clean and oil the grill grates to prevent sticking.
Place the marinated vegetables on the preheated grill. Make sure to leave space between the vegetables to allow for even cooking.
Grill the vegetables for about 4-5 minutes per side, or until they have nice grill marks and are tender but still slightly crisp.
Remove the grilled vegetables from the grill and arrange them on a serving platter.
Serve hot.
