Preparation
Wash and Peel the ridge gourd (turai) cut into small pieces
Cooking Steps
Heat oil in a pan over medium heat. Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped green chilies, chopped garlic, and grated ginger. Sauté for another 1-2 minutes until the raw smell goes away.
Add turmeric powder, cumin powder, coriander powder, and salt. Stir well.
Add chopped ridge gourd, homemade yogurt and mix well, ensuring the vegetable is coated in the masala.
Cover the pan with a lid and let it cook for 10-12 minutes over medium heat until the vegetable is cooked and tender.
Garnish with fresh coriander leaves and serve hot.
