Onion Finely Chopped
1 small cup (100g)
chopped tomato
0.5 small cup (50g)
Cumin seeds

Coriander Powder

Red chilli Powder

Instructions
Cooking Steps
Heat oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onion and sauté for 2-3 minutes until it turns translucent.
Add chopped tomato and green chili. Cook for 2-3 minutes until the tomato softens.
Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
Add chopped ridge gourds and mix well. Cover the pan with a lid and let it cook for 10-15 minutes over medium heat, stirring occasionally.
Once the ridge gourd is cooked, remove the lid and cook for another 2-3 minutes until the excess water evaporates.
Garnish with fresh coriander leaves and serve hot.
