Ridge gourd
200 gms (200g)
Cumin seeds
0.25 tsp (1.25g)
Turmeric powder
0.25 tsp (1.25g)
Common salt
0.5 tsp (2.5g)
Mustard oil
1 tsp (5g)
Coriander Powder
1 tsp (2g)
Chopped Onion
0.5 small cup (50g)
Fresh Coriander Leaves (chopped)
2 tbsp (10g)

Instructions
Preparation
-Wash, peel and chop tori
Cooking Steps
Heat the oil in a pan over medium heat.
Add the cumin seeds and let them splutter for a few seconds.
Add the finely chopped onions and sauté until they become translucent.
Stir in turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix everything well.
Add the chopped Tori (Ridge Gourd) and sauté for 5-7 minutes.
Add 1/4 cup water & cover the pan with a lid and let the Tori cook on low to medium heat for about 15-20 minutes.
Cook until the Tori becomes tender and cooked through. You can check for doneness by poking it with a fork; it should be soft.
Once the Tori is cooked, remove the pan from the heat.
Serve hot.
Garnish with fresh coriander leaves, if desired.
