Instructions
Preparation
- Cook steel cut oats.
Cooking Steps
Heat oil in a pot over medium heat. Add chopped onion and sauté for 2-3 minutes until it turns translucent.
Add chopped garlic and grated ginger and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped carrots and tomatoes. Mix well and cook for 5-7 minutes until the vegetables start to soften.
Add water and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes until the vegetables are completely cooked.
Add oats and let it cook for another 5-7 minutes until the oats are soft and have blended in the soup.
Let the soup cool down a bit and then blend it into a smooth puree. You can use an immersion blender or transfer the soup to a blender in batches.
Boil soup again for few mins.
Season the soup with salt and pepper to taste. Garnish with fresh coriander leaves and serve hot.
