Cooking Steps
In a mixing bowl, whisk together the vegan yogurt, olive oil, lemon juice, ginger-garlic paste, garam masala, paprika, turmeric powder, and salt.
Add the cubed tofu to the marinade, making sure each piece is coated evenly. Cover the bowl and refrigerate for at least 30 minutes or overnight for best results.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Skewer the marinated tofu cubes and place them on the prepared baking sheet. Bake for 10-15 minutes until the tofu is slightly browned.
In a saucepan, heat the remaining oil over medium heat. Add the diced onion and sauté until translucent.
Add the minced garlic and sauté for another minute.
Add the chopped tomatoes and simmer for 5-7 minutes until the tomatoes are cooked and soft.
Transfer the tomato mixture to a blender and blend until smooth.
Pour the tomato sauce back into the saucepan. Stir well.
Add the baked tofu to the tomato sauce and mix well.
Serve it.
