Instructions
Preparation
Cook the rice and keep aside.
Cooking Steps
Heat oil in a pot over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn translucent.
Add chopped carrots and celery. Sauté for 5-7 minutes until the vegetables are slightly softened.
Add water and bring the mixture to a boil.
Reduce the heat and let it simmer for 10-12 minutes until the vegetables are cooked.
Add cubed tofu and cooked brown rice. Stir well and let the soup simmer for another 5-7 minutes.
Add salt and pepper to taste.
Garnish with fresh parsley leaves and serve hot.
