Preparation
-Wash and chop all Vegetables.
Cooking Steps
Rinse the bulgur wheat thoroughly under cold water. Place it in a bowl and add enough hot water to cover it. Let it soak for about 20-30 minutes, or until it becomes soft and chewable. Drain any excess water.
In a mixing bowl, combine the soaked bulgur wheat, finely chopped parsley, finely chopped mint leaves, cucumber, tomato, and chopped onion.
In a small bowl, whisk together the lemon juice and extra virgin olive oil. Season the dressing with a pinch of salt and pepper.
Pour the dressing over the bulgur mixture and toss everything together to combine. Make sure the ingredients are well coated with the dressing.
Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.
Let the Tabbouleh salad sit for about 15-20 minutes before serving to allow the flavors to meld.
