Preparation
-Mix semolina, yogurt, and water in a bowl to form a thick batter (not too runny). Add salt and let it rest for 15-20 minutes. The semolina will absorb the moisture and thicken further.
Cooking Steps
For the Stuffing:
Heat oil in a pan and add cumin seeds. Let them splutter.
Add onions and ginger-garlic paste. Sauté until the onions turn translucent.
Add chopped green bell pepper, grated carrot, and green peas. Cook for 2-3 minutes.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for another 1-2 minutes.
Turn off the heat and mix in the chopped coriander leaves. Let the stuffing cool.
For the Suji Pockets:
After the batter has rested, check its consistency. It should be thick but spreadable. Add a few drops of water if it has become too thick.
Preheat the air fryer to 180°C (350°F).
Grease a small flat surface (like a plate or banana leaf) with oil to prevent sticking.
Take a spoonful (approx. 2 tbsp) of the batter and spread it evenly into a small circle (about 3-4 inches in diameter) on the greased surface.
Place a spoonful of the vegetable stuffing in the center of the circle.
Take another spoon of the batter and carefully spread it over the stuffing to cover it completely, sealing the edges gently with your fingers.
Carefully lift the sealed pocket and place it into the air fryer basket. Repeat for the remaining batter and stuffing.
Lightly brush or spray the pockets with oil.
Air fry for 12-15 minutes, flipping halfway, until the pockets turn golden brown and crisp.
Serve it.
