Green gram, whole
1 small bowl (100g)
Chopped Onion
1 small cup (80g)
Chopped Tomato
1 small cup (100g)
Chopped Green Chilli
1 tsp (5g)
Cumin seeds
0.5 tsp (1g)
Turmeric powder
0.5 tsp (1g)
Coriander Powder
0.5 tsp (1g)
Red chilli Powder
0.25 tsp (1g)
Common salt

Instructions
Preparation
Rinse the Green moong in water until the water runs clear.
Soak the green moong in water for 4-6 hours or overnight.
Drain the water and transfer the soaked green moong to a large bowl.
Cover the bowl with a cheesecloth.
Leave the bowl in a cool and dark place, like a kitchen cabinet.
After 1-2 days, the green moong will begin to sprout. Once the sprouts have reached the desired length (usually 1-2 inches), rinse them well & use.
Cooking Steps
Wash the sprouted moong thoroughly in water and keep it aside.
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and green chili, sauté for 2-3 minutes until the onions turn translucent.
Add chopped tomatoes and cook for 3-4 minutes until they soften.
Add turmeric powder, coriander powder, red chili powder, and salt. Stir well.
Add the sprouted moong and mix well with the masala.
Add water and let it cook for 10-12 minutes over medium heat, stirring occasionally, until the moong is cooked and the water has evaporated.
Garnish with coriander leaves and serve hot.
