Instructions
Preparation
- Blanch chopped spinach for 5-10 minutes
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add chopped garlic and sauté for 1-2 minutes until the raw smell goes away.
Add chopped blanched spinach leaves, coriander powder, turmeric powder, red chili powder, and salt. Stir well.
Add 2 cups of water and bring it to a boil.
Reduce the heat to low, cover the pan with a lid, and let it simmer for 10-15 minutes until the spinach leaves are cooked and tender.
Let the soup cool down and blend it in a blender until smooth.
Pour the soup back into the pan and heat it on low heat for a few minutes.
Garnish with fresh coriander leaves and serve hot .
