Instructions
Preparation
-Wash and chopped spinach.
Cooking Steps
Rinse the rice thoroughly and soak it in water for 30 minutes.
Heat oil in a pressure cooker or a pan over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they turn translucent.
Add chopped garlic and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped tomatoes and cook for 3-4 minutes until they soften and turn mushy.
Add chopped spinach and cook for 2-3 minutes until the leaves wilt.
Add coriander powder, turmeric powder, red chili powder, and salt. Stir well.
Drain the soaked rice and add it to the cooker/pan. Mix well, ensuring the rice is coated in the masala.
Add 2 cups of water and stir well.
Close the cooker lid and cook for 2 whistles. If using a pan, cover it with a lid and let it cook until the rice is done.
Once the rice is cooked, let it rest for 5 minutes. Then, fluff it up with a fork.
Serve hot.
