Instructions
Cooking Steps
In a non-stick pan, tofu cubes until they are slightly browned. Remove them from the pan and keep them aside.
In the same pan, heat a small amount of oil or cooking spray over medium heat.
Add cumin seeds and let them splutter.
Add chopped onion and garlic and sauté until the onion becomes translucent.
Add chopped tomato, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomato is soft and mushy.
Add the chopped spinach to the pan and mix well.
Cook the spinach for 2-3 minutes until it wilts down.
Add the sautéed tofu cubes to the pan and mix well.
Add water if needed to get the desired consistency.
Let the gravy simmer for 5-7 minutes until it thickens.
Add lemon juice and mix well.
Garnish with fresh coriander leaves and serve hot with rice or roti.
