Cooking Steps
Heat the olive oil in a large pot over medium heat.
Add the minced garlic, chopped celery, and chopped onion and sauté for 5-7 minutes until the vegetables are soft and fragrant.
Add the chopped lettuce and sauté for 2-3 minutes until it has wilted.
Add the vegetable broth, ground cumin, ground coriander, salt, and pepper. Stir well.
Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are tender.
Remove the pot from the heat and let it cool slightly.
