Cooking Steps
In a large pot, bring water, lemongrass, and kaffir lime leaves to a boil.
Add the chicken breast and reduce the heat to low. Simmer for 20-25 minutes until the chicken is cooked through.
Remove the chicken from the pot and shred it using two forks.
Add the shredded chicken back to the pot along with garlic, ginger, turmeric, cumin, coriander, cayenne pepper, coconut sugar or brown sugar, and tamari or coconut aminos. Stir well.
Simmer for an additional 10 minutes.
Divide the chicken soup into four bowls.
Top each bowl with sliced egg whites, bean sprouts, cilantro, and scallions.
