Rice Vinegar

Fresh cilantro (chopped)

Instructions
Cooking Steps
Rinse the cucumbers and pat them dry. Cut off the ends and slice them in half lengthwise.
Place the cucumbers cut side down on a cutting board and use a rolling pin or a meat tenderizer to smash them lightly until they crack open.
Cut the smashed cucumbers into bite-sized pieces and transfer them to a bowl.
Sprinkle the salt over the cucumbers and toss well. Let the cucumbers sit for 10-15 minutes until they release their liquid.
Drain the liquid and rinse the cucumbers under cold running water. Pat them dry with a paper towel.
In a small mixing bowl, whisk together the minced garlic, rice vinegar, sesame oil, and red pepper flakes.
Pour the dressing over the cucumbers and toss well to coat.
