Heat oil in a non-stick pan over medium heat.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add minced garlic and grated ginger and sauté for another 1-2 minutes until the raw smell goes away.
Add ground cumin, ground coriander, turmeric, red chili powder, and salt. Stir well.
Add cubed tofu to the pan and stir to coat the tofu in the spice mixture.
Cook for 5-7 minutes, stirring occasionally, until the tofu is lightly browned and crispy on all sides.
Garnish with chopped fresh coriander leaves before serving.
