Instructions
Cooking Steps
Rinse the samak rice thoroughly and soak it in water for 15-20 minutes.
Drain the water and keep the rice aside.
In a pressure cooker, heat oil over medium heat. Add cumin seeds and mustard seeds and let them splutter.
Add chopped onion and green chili and sauté for 2-3 minutes until they turn translucent.
Add chopped tomato and cook for 3-4 minutes until they soften and turn mushy.
Add mixed vegetables, turmeric powder, coriander powder, and salt. Mix well.
Add the soaked samak rice and 2 cups of water. Mix well.
Cover the pressure cooker with a lid and cook for 2-3 whistles on medium heat. If you do not have a pressure cooker, cook the rice in a pot with a tight-fitting lid until all the water is absorbed and the rice is cooked.
Once the pressure is released, open the lid and mix the khichdi well.
Garnish with fresh coriander leaves and serve hot.
