Preparation
-Cut salmon into pieces.
Cooking Steps
In a small bowl, mix together the low-sodium soy sauce, rice vinegar and honey. Set aside.
Place the nori sheet on a sushi mat or a clean kitchen towel.
Wet your hands and spread the cooked sushi rice over the nori sheet, leaving a 1-inch border at the top.
Arrange the cucumber, and salmon pieces on top of the rice.
Using the mat or towel, roll the sushi tightly, pressing gently to secure it.
Brush the top edge of the nori sheet with water to seal the roll.
Using a sharp knife, slice the sushi roll into 6-8 pieces.
Serve the sushi rolls.
