Cooking Steps
Grind the soaked rice and urad dal separately in a mixer grinder until they are smooth. Mix both the batters together in a bowl, add salt and mix well. Cover and let it ferment for 6-8 hours or overnight.
Grease the mini idli plates with oil and keep aside.
In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add grated ginger, grated garlic, and chopped green chilies and sauté for a few seconds.
Add grated carrot, chopped green beans, and chopped capsicum. Sauté for 2-3 minutes until the vegetables are cooked but still have a crunch.
Add chopped coriander leaves and mix well.
Add the sautéed vegetables to the idli batter and mix well.
Pour the batter into the mini idli plates and steam for 10-12 minutes until the idlis are cooked.
Serve hot.
