Instructions
Preparation
-Wash and soak quinoa for 10-15 mins.
Cooking Steps
Rinse the quinoa in a fine-mesh strainer and set aside.
In a pot, heat oil over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add grated ginger and green chili. Sauté for a minute.
Add chopped carrots, green peas, green beans, and bell peppers. Sauté for 2-3 minutes.
Add turmeric powder and salt. Stir well.
Add rinsed quinoa and water. Stir well.
Increase the heat and bring to a boil.
Once boiling, reduce heat to low and cover the pot. Let it cook for 15-20 minutes until all the water is absorbed and the quinoa is cooked.
Turn off the heat and let it sit covered for 5 minutes.
Fluff the quinoa with a fork and garnish with fresh coriander leaves.
