Cooking Steps
Rinse quinoa with cold water in a fine-mesh strainer and drain well.
Heat oil in a large pot over medium heat.
Add chopped carrots, celery, and zucchini and sauté for another 2-3 minutes.
Add quinoa, water, cumin powder, coriander powder, turmeric powder, salt, and pepper. Stir well.
Bring the soup to a boil and then reduce the heat to low. Cover and simmer for 20-30 minutes or until the quinoa is cooked.
Garnish with fresh cilantro and serve hot.
