Instructions
Preparation
-Soak Black bean overnight and pressure cook black bean.
Cooking Steps
In a large bowl, mix cooked black beans, chopped red onion, chopped red bell pepper, frozen corn, ground cumin, chili powder, salt, and black pepper.
Heat a non-stick pan over medium heat and brush with oil.
Place a tortilla on the pan and sprinkle shredded cheddar cheese or dairy-free cheese on one side of the tortilla.
Spoon the black bean and vegetable mixture on top of the cheese.
Fold the tortilla in half and press down with a spatula.
Cook for 3-4 minutes on each side until the tortilla is crispy and the cheese is melted.
Repeat with the remaining tortillas and filling.
Cut the quesadillas into wedges and serve hot.
