Preparation
In a small pan, dry roast coriander seeds and cumin seeds until fragrant and slightly browned. Remove from heat and let them cool.
Grind the roasted coriander and cumin seeds in a mortar and pestle, until coarsely ground.
Cooking Steps
Preheat the oven to 375°F (190°C).
In a mixing bowl, toss the cubed pumpkin with the ground coriander and cumin seeds, and salt.
Spread the pumpkin cubes on a baking sheet, and roast in the oven for 25-30 minutes until tender and slightly browned.
In another bowl, whisk together tamarind paste, jaggery powder, fennel seeds, water, and olive oil until well combined.
In a large salad bowl, toss the mixed salad greens and fresh basil leaves.
Add the roasted pumpkin cubes to the salad bowl and drizzle with the tamarind jaggery dressing. Mix well.
