Rinse Rice: Wash the basmati rice under cold water until the water runs clear. Soak the rice in ½ cup water for about 20 minutes, then drain.
Prepare Vegetables: While the rice is soaking, chop the mixed vegetables, onion, and tomato.
Sauté Aromatics: In a small pot, heat the oil over medium heat. Add the cumin seeds and let them splutter. Then add the finely chopped onion and sauté until translucent.
Add Ginger-Garlic Paste: Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add Vegetables: Add the chopped mixed vegetables and sauté for a few minutes until they start to soften.
Add Spices: Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well to coat the vegetables with the spices.
