Preparation
Puffed rice:
-Clean puffed rice – Spread puffed rice (murmura) on a plate. Pick out any husk or impurities. Do not wash.
-Roast lightly (optional) – For extra crispness, dry roast puffed rice in a pan for 2–3 minutes on low flame (do not brown). Keep aside.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds and let them splutter.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped carrot, green peas Mix well and cook for 3-4 minutes.
Add turmeric powder and salt. Mix well.
Add the dry puffed rice and mix well, toss gently with the masala. Sprinkle a little water (just 2–3 tbsp) to soften slightly, stir well, and cook for 1–2 minutes. This way puffed rice stays light and fluffy, not soggy.
Off the flame, garnish with fresh coriander leaves and a squeeze of lemon juice. Serve hot.
