Ingredients
Tilapia Fish
2 medium fillet (240g)
Tomato
0.25 cup, sliced (50g)
Tamarind Chutney
1 tbsp (15g)
Brown sugar
1 tsp (5g)
Clove Garlic, Chopped
2 tsp (10g)
Common salt
0.5 tsp (2.5g)
Red chilli Powder
0.25 tsp (1.25g)
Shallot
0.25 cup, diced (25g)
Lemon Grass
1 tbsp, chopped (10g)
Instructions
Preparation
Rinse the tilapia fillets and pat dry with paper towels. Cut them into 2-inch pieces.
Cooking Steps
In a small bowl, mix together the tamarind paste, coconut sugar or brown sugar, and salt. Set aside.
In a large mixing bowl, combine the tilapia pieces, sliced tomato, sliced lemongrass, sliced shallots, minced garlic, and sliced red chili pepper. Add the tamarind paste mixture and mix well.
Place one piece of banana leaf on a clean work surface. Spoon 1/4 of the tilapia mixture onto the center of the banana leaf.
Fold the banana leaf over the fish mixture, making a packet. Secure the edges with toothpicks or string.
Repeat with the remaining banana leaves and fish mixture.
Place the banana leaf packets in a steamer basket and steam over medium heat for 15-20 minutes until the fish is cooked through.
Serve hot.
