Instructions
Cooking Steps
Heat the oil in a non-stick pan over medium heat.
Add the cumin seeds, ginger and let them splutter.
Add the chopped onions and sauté until they turn translucent.
Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
Add the sliced Parwal (Pointed Gourd) and sauté for a few minutes.
Reduce the heat to low and add the spices: turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
Cover the pan and cook on low heat, stirring occasionally, until the Parwal is tender and cooked through. It may take about 15-20 minutes.
Sprinkle garam masala and give it a final stir.
Garnish with fresh coriander leaves.
Parwal vegetable is ready.
