Preparation
Wash and blanch chopped spinach leaves in boiling water for 1-2 minutes. Drain it.
Grate paneer cubes.
Cooking Steps
In a mixing bowl, combine soya flour, whole wheat flour, blanched chopped spinach, carom seeds, and salt.
Gradually add water and knead into a soft, pliable dough. Cover and let it rest for 10-15 minutes.
In another bowl, mix grated paneer, green chilies, coriander leaves, cumin powder, chaat masala, and salt.
Divide the stuffing into small portions, one for each roti.
Divide the dough into equal portions and roll each into a small ball.
Flatten a ball of dough, place a portion of the paneer stuffing in the center, and seal the edges to cover the stuffing completely.
Roll out the stuffed dough gently into a round roti, about 6-8 inches in diameter. Use a little flour for dusting if needed.
Heat a non-stick pan or tawa over medium heat.
Place the rolled-out roti on the pan and cook for 1-2 minutes on one side. Flip and cook the other side for another 1-2 minutes.
Apply a small amount of oil on both sides and cook until golden brown spots appear.
Serve hot .
