Instructions
Preparation
Clean the mushrooms by brushing off any dirt, Slice the mushrooms into thin slices.
Bring a large pot of water to a boil. Add Mushrooms to the boiling water.
Blanch the mushrooms in the boiling water for 2-3 minutes, until they are slightly softened and tender.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped green chilies and ginger-garlic paste. Sauté for another 1-2 minutes until the raw smell goes away.
Add chopped tomatoes and cook for few mins.
Add coriander powder, turmeric powder, and salt. Stir well.
Add chopped spinach and cook for 5-7 minutes until the spinach is wilted and cooked.
Remove the mixture from the heat and let it cool. Once cooled, blend the mixture in a blender or food processor until smooth.
Return the blended mixture to the pan and add sliced blanched mushrooms and garam masala. Cook for 7-10 minutes until the mushrooms are cooked through.
Serve hot.
