Instructions
Preparation
Soak steel cut oats over night for 7-8 hours
Cooking Steps
Roast the steel cut in a pan for 2-3 minutes until they turn slightly brown. Keep them aside.
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add chopped onions and green chili and sauté for 2-3 minutes until the onions turn translucent.
Add chopped tomatoes and cook for 2-3 minutes until they turn mushy.
Add chopped carrots, bell peppers, and green peas. Mix well.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
Add the roasted oats to the pan and mix well.
Cover the pan with a lid and let it cook for 5-7 minutes over low heat until the oats are cooked and the vegetables are tender.
Garnish with fresh coriander leaves and serve hot
