Preparation
Dry roast the oats in a pan on low heat for 3-4 minutes until they release a nutty aroma. Let them cool and then grind them into a fine powder.
Grease the idli molds lightly with oil and keep the steamer ready.
Cooking Steps
In a mixing bowl, combine the oats powder, semolina, and salt.
Add plain curd. Mix well.
Gradually add water to form a thick batter of pouring consistency.
Heat oil in a pan, add mustard seeds, and let them splutter. Pour this tempering into the batter and mix.
Add baking soda just before steaming. Mix well to ensure it is evenly distributed.
Pour the batter into the greased idli molds and steam for 10-12 minutes on medium heat. Check doneness with a toothpick; it should come out clean.
Remove the idlis from the molds and serve hot.
