Instructions
Preparation
For Nutri Soyabean:
-Rinse in cold water.
-Boil water, add soyabean.
-Simmer 15–20 mins till soft.
-Drain, rinse cold, squeeze excess water.
Cook the Rice:
-Rinse rice till water runs clear.
-Boil water in a pan (about 2× rice volume).
-Add rice, cook on medium till tender.
-Drain excess water, fluff and serve.
Cooking Steps
Heat the oil in a skillet over medium heat.
Add chopped onions and green chili and sauté for 2-3 minutes until the onions turn translucent.
Add the chopped garlic and sauté for about 30 seconds until fragrant.
Add coriander powder, garam masala, red chili powder, and salt. Stir well.
Add soaked soyabean and cook for 3-4 minutes, stirring occasionally, until it starts to brown.
Add the chopped mixed vegetables to the skillet with the soyabean.
Cook for an additional 10-15 mins, or until the vegetables are tender but still crisp.
Add the cooked rice to the skillet with the vegetables and soyabean.
Garnish with fresh coriander leaves and serve hot.
