Instructions
Cooking Steps
Soak steel-cut oats in water for 30 minutes.
Drain the water and rinse the oats in fresh water.
In a pot, boil water with a pinch of salt. Add the soaked oats and cook over medium heat for 20-25 minutes, stirring occasionally. The oats should be cooked through and slightly chewy. Drain any excess water and set aside.
In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped garlic and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped green bell pepper and carrots, and cook for 5-7 minutes until the vegetables are tender.
Add chopped tomatoes, turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
Add the cooked oats to the pan and mix well, ensuring the vegetables are evenly distributed.
Garnish with fresh coriander leaves and serve hot.
