Instructions
Cooking Steps
In a large pot, heat a oil in medium flame, sauté onions and garlic until onions are translucent.
Add sliced mushrooms and cook until they release their moisture and are tender.
Add 4 cups of water and bring to a boil. Reduce heat and simmer for 10 minutes.
Add chopped spinach and cook for an additional 5 minutes.
Blend the soup using an immersion blender or transfer to a blender and blend until smooth.
Season with salt and black pepper to taste.
Garnish with fresh parsley and serve hot
