In a large pot, heat the milk over medium heat until it reaches 55°C.
In a small bowl, mix the citric acid with 1/4 cup of cool water until dissolved.
Add the citric acid mixture to the milk and stir gently until it starts to curdle. Turn off the heat and let it sit for 5 minutes.
Dissolve the liquid rennet in 1/4 cup cool water and add it to the milk. Stir gently for 30 seconds.
Let the milk sit for 5-10 minutes until it forms a solid curd.
Use a slotted spoon to remove the curd from the whey and transfer it to a microwave-safe bowl.
Microwave the curd on high for 1 minute, then drain the excess whey.
Knead the curd with your hands until it is smooth and stretchy. Add salt and knead again.
Shape the cheese into a ball or log and store it in the refrigerator until ready to use.
