Instructions
Preparation
-Soak kodo millet for 1 hour.
Cooking Steps
Heat oil in a pot over medium heat. Add chopped onions and chopped garlic and sauté until they turn translucent.
Add chopped carrots, celery, and zucchini. Mix well and cook for 5-7 minutes until the vegetables are slightly tender.
Drain the water from the soaked kodo millet and add it to the pot. Mix well.
Add water, salt, and pepper. Mix well and bring the soup to a boil.
Once the soup comes to a boil, reduce the heat and let it simmer for 15-20 minutes until the vegetables and kodo millet are cooked and tender.
Check the seasoning and adjust it as per your taste.
Serve hot.
