Split Urad Dal (Raw)
0.5 small cup (50g)
Fresh Coriander Leaves (chopped)
1 tsp (5g)
Mint leaves
1 tsp (5g)
Curry Leaves
1 tsp (5g)
Common salt
0.5 tsp (2.5g)
Rice, raw, milled
0.5 cup (100g)

Instructions
Preparation
Rinse the rice and urad dal separately. Soak them in enough water for 4-5 hours.
Cooking Steps
Drain the water and grind the soaked rice and urad dal separately to a smooth batter using a blender or grinder.
Mix the rice and urad dal batter together in a large bowl. Add salt as per taste and mix well.
Add water as needed to make a smooth batter of pouring consistency. Cover the bowl and let it ferment overnight or for 8-10 hours.
The next day, mix the fermented batter gently.
Heat a non-stick pan or griddle over medium heat. Pour a ladleful of the batter onto the hot pan and spread it gently to make a thick utthapam and sprinkle chopped coriander leaves, mint and curry leaves.
Drizzle some oil around the edges of the utthapam. Cook for 2-3 minutes until the bottom turns golden brown.
Flip the utthapam using a spatula and cook the other side for 1-2 minutes until golden brown.
Repeat the process with the remaining batter.
Serve hot.
