Instructions
Cooking Steps
Rinse the basmati rice in water and soak it in water for 30 minutes.
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions, green chili, and grated ginger. Sauté for 2-3 minutes until the onions turn translucent.
Add chopped mixed vegetables and cook for 2-3 minutes until they are slightly softened.
Add coriander powder, turmeric powder, red chili powder, garam masala, bay leaf, and salt. Mix well.
Add cubed paneer and mix gently.
Drain the water from the soaked rice and add it to the pan. Mix well.
Add 2 cups of water and mix well.
Cover the pan with a lid and cook on low heat for 15-20 minutes or until the rice is cooked and the water has been absorbed.
Remove from heat and let it rest for 5 minutes.
Fluff the rice with a fork and garnish with fresh coriander leaves.
Serve hot with raita or yogurt.
