Instructions
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add ginger-garlic paste and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped vegetables and cook for 3-4 minutes until they soften slightly.
Add turmeric powder, red chili powder, and salt. Stir well.
Add cooked lentils and mix well.
Add diced tomatoes and cook for 2-3 minutes until they are soft and mushy.
Add 1 cup of water, cover the pan with a lid, and let it simmer over low heat for 10-15 minutes until the vegetables are fully cooked, and the gravy thickens.
Garnish with fresh coriander leaves and serve hot.
